A one-pot wonder of perfectly steamed rice and potatoes. This dish is cooked by combining all the ingredients together is one pot, and adding aromatic spices and delicious fluffy rice alongside potatoes, which are the star of this dish. This is perfect for vegetarians, and makes the perfect dish for lunch or dinner, when served with yogurt, raita, or kachumber salad.

Ingredients

    • Oil½ cup
    • Onion, chopped1
    • Cloves5 - 6
    • Coriander seeds1 tablespoon
    • Cinnamon sticks2
    • Bay leaf1
    • Ground turmeric1 teaspoon
    • Black pepper powder½ teaspoon
    • Red chili powder1 tablespoon
    • Ground coriander1 tablespoon
    • Garam masala1 tablespoon
    • Chicken powder1 tablespoon
    • Saltto taste
    • Tomato, chopped1 - 2
    • Potato, cubed5
    • Waterhalf litre
    • Green chilies, juliennefor garnish
    • Fresh coriander, choppedfor garnish
    • Tomato, cut into tiresfor garnish

Preparation

  • Heat oil in a pot, and saute onions until translucent.
  • Add cloves, coriander seeds, cinnamon stick, bay leaf, ground turmeric, red chilli powder, black pepper, ground coriander, garam masala, chicken powder, and salt. Mix well.
  • Add chopped tomatoes and potatoes. Mix well and add water. Cover the lid, and cook for 5 minutes.
  • Add pre-soaked rice and mix
  • Add water, mix, cover the lid, and steam for 10 - 15 minutes over low flame.
  • Garnish with tomatoes, green chilies, and freshly chopped coriander. Cover the lid and steam for a further 8 minutes.
