Spring Onions, also known as Scallions are vegetables of various Allium onion species, they not only taste great but are also extremely nutritious for the human body. Both the green leafy part and the white bulb of the spring onion are edible. It has numerous health benefits such as; it reduced the risks of cancer, lowers blood sugar level, lowers blood sugar level, enhances vision and prevents cold and flu.

BUYING
Scallions are found in the market all around the year, in all seasons. Avoid buying green onions with yellowing tops or wilted greens, instead look for green onion stalks with fresh, green tops and slightly white ends. Soggy or rotting white tips should also be avoided. 

STORING
Unlike the normal onions, scallions are little tricky to store. Put your green onions in a jar half filled with water, then cover them in a plastic bag and store them in a refrigerator. Replace the water on alternate days. 
However if you want to store them in the freezer for later use then chop the green onions into small pieces and put them in plastic bag or a cleaned plastic bottle and throw it in the refrigerator, it can be used for over a month.

CUTTING 
Step 1: Cut the roots off.

Step 2: Separate the white bulb from the green tops.

Step 3: Peel the skin off of the white bulb.

Step 4: Make thin slices of the white bulb.

Step 5: Chop the green tops in to small pieces.

There you have it, now add them in your dish or store them in the refrigerator.
