Garden Salad Cups

A delightful appetizer to serve at any outdoor brunch or garden party. Presented in little cabbage cups, this is a wonderful addition to any menu. Since it contains no animal products, and no carbs, this is perfectly suitable for vegans, vegetarians, and anyone on a diet.

Ingredients

    • Cabbage, sliced½ piece
    • Radish, rough julienne1
    • Parsley, chopped½ bunch
    • Onion, sliced1
    • Coriander, chopped1
    • Tomato, diced1
    • Olive oil2 tablespoons
    • Mustard paste1 tablespoon
    • Salt1 teaspoon
    • Apple cider vinegar1 teaspoon
    • Ground black pepper1 teaspoon

Preparation

  • In a bowl combine olive oil with apple cider vinegar, mustard paste, salt, black pepper, mix it well and let it rest for 15 minutes.
  • Now roughly slice cabbage and save it for later use.
  • Then roughly julienne radish and save it for later use.
  • Roughly chop parsley and save it for later use.
  • Slice 1 onion and save it for later use.
  • Chop coriander and save it for later use.
  • Dice one tomato and save it for later use.
  • In a mixing bowl combine all the chopped vegetables with the prepared salad dressing and mix well.
  • Make cups out of cabbage and present the salad in it.
