This whole chicken marinated with spices is a deep fried delicacy from Lahore. It is called Nawabi Chargha because of the unique flavors used in its preparation. It can be served with rice or naan.

Ingredients

    • Whole chicken1 kilogram
    • Salt1 tablespoon
    • Red Chili Powder1 tablespoon
    • Turmeric Powder1 tablespoon
    • Garam masala1 tablespoon
    • Coriander Powder1 tablespoon
    • Green Chili Paste1 tablespoon
    • Kashmiri Chili Powder1 tablespoon
    • Lemon Juice1 tablespoon
    • Yogurt½ cup
    • Cumin seeds1 teaspoon
    • Carom Seeds1 tablespoon
    • Melted butterfor glazing

Preparation

  • Place the whole chicken on a cutting board and make diagonal cuts. Keep aside.
  • For marinade: Add red chili powder, ground turmeric, salt, deghi red chili powder, green chili crushed, garam masala, ground coriander, lemon juice, cumin seeds, carom seeds, oil, and yogurt in a mixing bowl. Whisk well.
  • Place the chicken in the marinade and let it rest for any duration between 4 hours or overnight.
  • Place the chicken on a baking dish covered in foil. Secure its leg with a kitchen thread.
  • Cover the chicken with foil and bake in the pre-heated oven at 200 degrees celsius for 30-40 minutes.
  • Once cooked, remove the cover and apply clarified butter with a brush. Roast again for 5-7 minutes.
