Daal bharay karelay also known as lentil stuffed bitter gourd, is a variation dish similar to qeema bharay karelay. It is scrumptious and delicious. Bitter gourd is a difficult vegetable to work with not every one can eat it or are successful in cleaning the bitter taste from it. This dish is especially made for vegans. It can be served with raita, flavoured zeera yogurt and chapati.

Ingredients

    • Bitter gourd, deseeded4-5
    • Oil4 – 5
    • Onion, sliced1
    • Garlic paste1 tablespoon
    • Cumin seeds1 tablespoon
    • Ground coriander1 tablespoon
    • Red chili powder1 tablespoon
    • Garam masala1 tablespoon
    • Ground turmeric1 teaspoon
    • Ground cumin1 tablespoon
    • Ground white pepper1 tablespoon
    • Chat masala1 tablespoon
    • Split chickpea lentil, boiled250 grams
    • Saltto taste
    • Cream2 – 3 tablespoons
    • Fresh coriander, choppedfor garnish
    • Tamarind paste1 – 2 tablespoons

Preparation

  • In a wok heat oil over medium flame and saute onions until brown.
  • Add garlic paste, cumin, red chilli powder, garam masala, ground turmeric, ground coriander, ground white pepper, ground black pepper and chat masala. Mix.
  • Add boiled split chickpea lentils and stir well.
  • Add salt, cream and mix well. Then add chopped coriander and stir. Add tamarind and mix well
  • Take the peeled and de-seeded bitter gourd and stuff the lentil. Tie and secure each bitter gourd with a thread.
  • Heat oil in a wok and fry each bitter gourd until brown. Place on a tissue paper to soak up excess oil.
