Chhola Pulao


A delicious pulav made with rice, spices and chickpeas is a hearty dish that is everyones favorite meal. This dish can be served with raita, salad at family dinners and lunch.

    • Basmati chawal, soaked½ kilo
    • Water1 liter
    • Saltto taste
    • Oil3 – 4 tablespoons
    • Onion, sliced2
    • Potato, cut into halves4 – 5
    • Red whole chili2 – 3
    • Ginger garlic paste1 teaspoon
    • Chicken stock½ liter
    • Whole spices1 tablespoon
    • Green chilies4 – 5
    • Ground white pepper1 teaspoon
    • Ground black pepper1 teaspoon
    • Chickpeas, pre boiled400 grams
    • Fried onionsfor garnish
    • Fresh coriander, choppedfor garnish


  • Heat water in a large pot, add salt, soaked rice and boil until half of the rice is cooked. Strain and keep aside.
  • Heat oil in a large pot and saute onions until light brown.
  • Add potatoes, whole red chili, ginger garlic paste and mix well.
  • Now add chicken stock, whole spices and stir.
  • Add green chilies, ground black pepper, ground white pepper, stir, cover the lid and simmer for 5 minutes.
  • Add boiled chickpeas, cover the lid and simmer for 5 to 8 minutes.
  • Now add pre-boiled rice and mix.
  • Add fried onions, freshly chopped coriander, green chilies, cover with a cloth and steam for 8 minutes.
