Baked Potato Jackets

These delicious baked potato jackets are stuffed with a combination of different vegetables, tomato puree and mozzarella cheese for a wholesome appetizer. This recipe is extremely easy to make once the salsa dressing is prepared and is just needed to be popped in the oven for it to be ready. Ingredients

    • Water1 liter
    • Potatoes3 large-sized
    • Tomatoes1 cup, chopped
    • Onion1 cup, chopped
    • Coriander½ cup, chopped
    • Green chilies1-2 chopped.
    • Garlic1-2 chopped
    • Olive oil1 tbsp
    • Chili sauce1 tbsp
    • Tomato puree1 tbsp
    • Saltto taste
    • Black Pepperto taste
    • Oilfor greasing
    • Mozzarella cheese1 ½ cup shredded

Preparation

  • Heat the water in a pan, add potatoes to it and bring for a boil for ten to fifteen minutes.
  • Now for the salsa sauce, add tomatoes, onions, coriander, green chilies, garlic, olive oil, chili sauce, tomato puree, salt, and black pepper in a bowl.
  • Mix it thoroughly and keep aside.
  • When the potatoes are soft, cut them into halves.
  • Now scoop out the potatoes from the center and grease it with oil.
  • Fill the hollow potatoes with salsa sauce.
  • Add the shredded mozzarella cheese on top.
  • Now, put the potatoes in the oven and bake them on 480 degrees F or 250 degrees C, for ten minutes.
  • Baked potato jackets are ready to serve!
