Baigan ka bhurta is one of the different versions of cooking an eggplant. It is a North Indian dish where eggplant is charred, mashed and cooked with spices. Baigan bharta is easy to make and is served with rotis.

Ingredients
Eggplant2-3
Oil3-4 tablespoons
Onions, sliced2 MEDIUM-sized
Tomatoes, chopped2-3
Red chilli powder1 tablespoon
Garam masala1/2 teaspoon
Ground turmeric1/2 teaspoon
Ground coriander1/2 teaspoon
Saltfor taste
Black pepper1/2 teaspoon
Aamchoor powder1 teaspoon
Ground cumin1/2 teaspoon
Yoghurt1 cup
Lemon juice1/2 teaspoon
Green chilies, chopped1-2
Ginger, juliennefor garnish
Fresh coriander, choppedfor garnish
Preparation
Insert a skewer into the eggplant, charring on a medium flame until the skin is burned.
Place the charred eggplant in a bowl of cold water immediately and remove the skin.
Mash the eggplant.
In a medium pot heat oil over medium flame and sauté the onions until translucent.
Add tomatoes and mix well. Simmer for 05 to 10 minutes.
Add the mashed eggplant, red chilli powder, garam masala, turmeric, coriander, and salt in a bowl and mix.
Add black pepper, aamchoor powder, ground cumin, and yoghurt. Mix well.
Add green chilies and lemon juice, stir and steam for 05 to 08 minutes.
Garnish with coriander. Serve with naan or roti.
