Achari bhindi is a scrumptious dish made with crispy okras fried in pickled spices. It is one of the different ways to cook bhindi. It is easy to make and can be served with rice and rotis for lunch.

Okra1 kilogram
Oilfor deep frying
Tomato, chopped2-3
Garlic paste¼ teaspoon
Black mustard seeds½ teaspoon
Fennel seeds½ teaspoon
Mustard seeds½ teaspoon
Fenugreek seeds½ teaspoon
Cumin seeds½ teaspoon
Nigella seeds½ teaspoon
Saltto taste
Red chili powder½ tablespoon
Ground cumin½ teaspoon
Ground turmeric½ teaspoon
Aam Choor powder½ teaspoon
Yogurt½ cup
Green chili, chopped2-3
Fresh coriander,chopped

Preparation
Heat oil in a wok. Deep fry okras until semi crunchy.
Place the fried okras on tissue to absorb excessive oil. Save for later use.
For achari masala: heat oil in a medium sized pot, add chopped tomatoes and sauté until tender.
Add ginger paste and stir well.
Mix together black mustard seeds, fennel seeds, mustard seeds, fenugreek seeds, cumin seeds, nigella seeds, salt, red chili powder, ground cumin, and ground turmeric until all the spices are well incorporated.
Further add khatai powder and yogurt. Mix and cover; simmer for about 5 minutes.
Add the fried okra along with chopped green chilies, and mix well.
Garnish with coriander leaves and green chilies and serve.
